Industrial salts contain a lot of impurities and many harmful ingredients, such as nitrite is a carcinogen, there are some heavy metals that can damage the liver and kidneys. Although sodium cyclamate, sodium benzoate and potassium sorbate can be used as food additives, but they are must strictly added in accordance with the relevant standards, too much additives will cause harm to human body. For example, sodium benzoate, as a preservative, even though it has the prevent deterioration of acid and extend the shelf life, but the amount of excessive use can cause harm to liver and even cause cancer.

For food seasoning detection, it can be adopted with gas chromatography (GC), high performance liquid chromatography (HPLC), atomic absorption spectrometer (AAS), atomic fluorescence spectrometer (AFS).
